Soaking and cooking
Soaking tanks allow for grains, corn and flour to absorb more water and this allows for a more accurate temperature control in the mixer as well as an improved moisture contents in the final product.
Cooking tanks allow for soaking milled flour in near boiling water. This increases the temperature of the product very quickly (1 to 2.5 hours) up to a level where starch will start to gelatinize. This transformation at the chemical level will influence the taste and the texture of the end-product.
